Easy Vegetable Korma recipe using Instant pot pressure cooker

Vegetable Korma is our house favorite. I used to make it in a  very complicated method earlier until I learnt this simple pressure cooker recipe. Recently I made it using my Instant pot. You can also use the regular pressure cooker to make it. Scroll down for the step by step method.

Ingredients :

Spices  : Fennel seeds - 1 tsp

Bay leaves - 2

Cloves -3

Cardamon -2

Cinnamon sticks -1/2

Ginger garlic paste - 1 tbsp

Onion -3

Tomato -1

Veggies - Carrot,beans,cauliflower, broccoli, potato,cabbage cut into small pieces and green peas

Kitchen king masala - 1 Tsp

Garam masala powder - 1 Tsp

Salt to taste

Cilantro leaves to garnish at the end

To grind:

Fennel seeds - 1 tsp

Coconut - 1/2 cup (fresh or frozen)

Green chillie -3 to 4 (depending on spice level)

Cashew nuts - 5

Method: 

Set the IP to Saute mode

Then add some oil and the spices

Then add ginger garlic paste

Once it turns brown add onions , add some salt so the onions cook faster

Once onion turns translucent and brown add the veggies

Now grind the ingredients under "to grind" and add it to the veggies

Add chopped  tomato, salt , garam masala and kitchen king masala

Set IP to pressure (Low pressure) 20 minutes mode

After done leave it for some time for Natural release. Then change the pressure valve from sealing to venting

Vegetable Korma is ready. Garnish with cilantro leaves . Serve it hot with paratha/roti .

For working moms : If you have the veggies chopped during weekend it is a very easy  to make during a weekday.
